    The Story

    The insight is almost embarrassingly simple: register people where they already are, in the offices they already visit, rather than where they are politely invited. This is on purpose the humblest thing on the tray — chickpea, cornmeal, a nutrition-program pantry — passed on a paper slip, because democracy handed out at the counter counts exactly as much as democracy handed out at a gala.

    Ingredients

    • Chickpeas
    • Fine cornmeal
    • Cumin and smoked paprika
    • Garlic aioli
    • Parsley
    • Lemon zest

    Preparation

    1. 1.Coarse-mash chickpeas with cumin and bind lightly.
    2. 2.Roll into 1" spheres and crust in cornmeal.
    3. 3.Fry until deep gold and drain.
    4. 4.Dot with smoked paprika aioli, parsley, and lemon zest; serve on a small paper slip.
